3 Ways Veggies Can Replace Carbs In Your Diabetic Diet Plan

Cutting back on carbs is a great way to help control your blood sugars and keep them steady. But, no one likes to deny themselves when it comes to mealtime or their favorite foods. Just because you’ve been advised to trim carbs doesn’t mean that you have to cut calories or flavor.

Veggie Noodles

If you are willing to invest in a spiralizer, there are a number of sturdy vegetables that you can turn into a spaghetti or pad thai noodle replacement. Many vegetables take on a very similar look to pasta when properly prepared and cooked. You can try zucchini spaghetti, parsnip noodles, and even spaghetti squash. The last item on the list has its own veggie “noodles” inside, so there’s no need for a spiralizer. Consider cutting a spaghetti squash in half and topping it with meat sauce, parmesan, or pepperoni and mozzarella before baking in the oven.

Stuffed Veggies

Almost any kind of vegetable can be turned into a tasty entrée with an appropriate filling. Many people know of the classic stuffed peppers, containing a mixture of ground beef and rice. Instead of rice in this recipe, just use riced cauliflower or add in extra diced peppers. Some other alternatives to consider include stuffed zucchini and sweet potatoes. You can take the sweet potatoes in either a savory or a sweet direction depending on your preferences.




Veggie Rolls & Wraps

Wraps are an easy snack or lunch and don’t require a lot of effort. Get a mandolin slicer to slice zucchini or yellow squash thinly. Wrap veggie slices around meat filling and fry or bake in the oven. Large cabbage leaves make great sausage cabbage rolls with a tomato sauce topping that is sure to please anyone in the family. Fresh lettuce or Swiss chard leaves can be used to make raps for vegetable fillings, meat fillings, or a mixture of both. Consider making a chicken salad wrap instead of one from flour tortillas for a light lunch.
