It turns out coffee is the major source of antioxidants in the American diet. And the major antioxidant in coffee isn’t caffeine; it’s chlorogenic acid. And chlorogenic acid survives the decaffeination process just fine. So if you’ve found that coffee destabilizes your blood sugar, go decaf. You won’t be missing out.
